Ingredients

  • 1/8 teaspoon turmeric, (or 1/8t. saffron)
  • 1 cup cooked rice, (minute rice or reg)
  • 1 cup frozen sugar snap peas, (or snow peas)
  • 1 medium red bell pepper, seeded and chopped
  • 1/2 cup chicken broth
  • 1/4 cup chopped onion
  • 1 clove garlic, crushed

Step 1

Cook and drain snow or snap peas. (If using saffron, soak saffron in 1/2 teaspoon to soften) In medium saucepan, combine rice, snow peas or sugar snap peas, red pepper, chicken broth, and onion. Cook over medium high heat 5 to 8 minutes until rice mixture is thoroughly heated, stirring occasionally. Stir in turmeric or softened saffron and garlic into rice mixture. Cook over medium high heat 1 to 2 minutes until yellow color is evenly distributed, stirring once during cooking.

MICROWAVE DIRECTIONS: Cook and drain snow or snap peas. (If using saffron, soak saffron in 1/2 teaspoon to soften) In 1 1/2-quart microwave safe casserole, combine rice, snow peas or sugar snap peas, red pepper, chicken broth and onion; cover. Microwave on High for 4 to 6 minutes until rice mixture is thoroughly heated, stirring once halfway through cooking. Stir in softenend saffron or turmeric and garlic into rice mixture; cover. Microwave on HIGH for 1 to 2 minutes until yellow color is evely distributed stirring once during cooking.
