Ingredients

  • 2 cups self rising cornmeal mix
  • 1/4 cup butter, melted
  • 2/3 cup buttermilk, or sour cream
  • 2 eggs, slightly beaten
  • 8 ounces canned creamed corn
  • 2 tablespoons shortening

Preparation

Step 1

Preheat oven to 450 degrees. Heat a 9" iron skillet or 9"square baker in oven. Melt the 2 tablspoons shortening in skillet/pan

Mix canned corn and all wet ingredients including melted butter.
Mix wet ingredients with the 2 cups self rising cornmeal just till moistened.


Pour batterr into hot pan and bake 20 minutes.
