- 1 tablespoon dark brown sugar
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1 (1-lb.) salmon fillet
- Water/oil mixture

Preparation
Step 1
Preheat oven to 375 degrees. In a small bowl, combine first 5 ingredients (brown sugar through cinnamon); blend well and rub over the flesh side of the fillet; cover and refrigerate for 30 minutes. Place salmon, skin side down, in a baking dish coated with water/oil mixture; bake for 20 to 25 minutes or until fish flakes easily when tested with a fork.
SERVING SUGGESTION: Brown rice and steamed asparagus.
GLUTEN FREE: No changes necessary.
