Ingredients
- 1 pound turkey breast tenderloins
- 1/4 teaspoon black pepper
- 1 tablespoon unsalted butter
- 1 1/2 ounces thinly sliced lean deli ham, cut into bite-sized pieces
- 1/2 cup orange juice or chicken broth
- 2 (9- to 10-oz.) packages fresh spinach
- 1 orange, cut into wedges

Preparation
Step 1
Season turkey tenderloins with pepper. Melt the butter in a large skillet over medium-high heat; add turkey and cook for 12 minutes or until no longer pink, turning once. Remove from skillet and slice into strips; cover and keep warm. Add ham to skillet; cook and stir for 1 minute or until heated through and starting to crisp. With a slotted spoon, remove from skillet. Add orange juice to the skillet and bring to a boil. Add spinach, half at a time, cooking until just wilted. Add orange wedges with second batch of spinach. Using tongs, arrange spinach on dinner plates; sprinkle with additional pepper if desired. Top with turkey and ham and drizzle with remaining juices from skillet.
SERVING SUGGESTION: Steamed new potatoes and steamed baby carrots.
GLUTEN FREE: Make sure ham is gluten free.
