Cream Puffs

Ingredients
- 1 cup water
- 6 Tb. butter
- 1/4 tsp. salt
- 1 cup flour
- 4 large eggs

Step 1
1.Preheat oven to 400 degrees. Spray a cookie sheet with Pam.
2. In large saucepan, heat water, butter and salt to boiling until the butter is melted. Remove from heat. Vigorously stir in flour all at once until the mixture forms a ball and come away from the side of the pan.
3. Add eggs, one at a time, beating well after each addition..and continue beating until the batter becomes smooth and satiny.
4. Drop batter by scant 1/4 cup into 10 large mounds, 2 inches apart, onto prepared cookie sheet. With your fingertip moistened with water, gently smooth the top of each mound of dough.
5. Bake 40 - 45 minutes, or until the puffs are golden brown. Remove from oven. Then, with a knife, poke a hole in one side of each puff. This is to release the steam. Turn off the oven. Return the puffs to the oven and leave them in the "turned off oven" for at least 10 minutes. This is to allow the puffs to dry out. Transfer puffs to wire racks to cool completely.
6. Using a serrated knife, slice ach cooled puff horizontally in half. With your fingers, remove and discard any moist dough from inside each puff.
7. Fill each puff with your choice of cream filling. I use a vanilla pudding mixture.....but you can also fill each one with ice cream. It also good to drizzle melted chocolate over each one before serving.
8. The vanilla pudding mixture I is use is...
1 package of vanilla instant pudding mix. Mix this up using only half the milk that is required. Let it set up, then fold in enough cool whip to the thickness that you desire. You can use other pudding flavors if you choose. Butterscotch flavor is a great option as well.
