Ingredients
- 1 package, Bakers 8 oz. size, semi-sweet chocolate
- 1/4 tsp. peppermint extract
- 1 sleeve of Ritz Crackers (about 35 crackers)
- 1 peppermint candy cane, crushed into pieces (optional)
- (if using candy cane, the kind with the red, green and white colors makes the best presentation)

Step 1
Microwave to melt the chocolate in a small bowl as directed on the package...or melt in a double boiler. Stir until the chocolate is melted completely. Add in the peppermint flavoring extract, and mix well. Dip each cracker into the chocolate, completely coating the cracker. Place onto wax paper. Sprinkle with crushed candy. Refrigerate until chocolate it set. This makes a great Christmas cookie, if using the crushed candy cane.
Variation:
By omitting the peppermint extract and candy cane...you can instead, spread peanut butter on top of each cracker, then dip in the chocolate and let set.
