Cod & Creamed Spinach Casserole

Ingredients
- 2 - 6oz. bags baby spinach
- 2 T unsalted butter
- 1 minced shallot
- 2/3 cup heavy cream
- 1 tsp sea salt
- 3/4 tsp black pepper
- pinch of grated nutmeg
- 2 lbs cod
- 1/2 cup panko
- 1/3 cup shredded sharp cheddar

Preparation
Step 1
Cook spinach and drain, squeeze water, final chop. Melt butter and cook shallots 2 mins, add cream and bring to boil. Add spinach and seasonings. Cook 5 mins stirring till thickened.
Season cod with S&P, add to buttered casserole dish, spread spinach mix over top of cod, sprinkle combined panko and cheddar on top. Bake 400 30 mins
