    pc. Matzah, broken up into small pieces

  • 2-4

    eggs, stirred with salt and pepper to taste


Pour warm water over matzo pieces, enough to cover. Let sit a few mins. Drain water off by squeezing down on matzo. Add drained matzo to scrambled egg mixture. Stir. Cook as you would any scrambled eggs. If you like it more well down, you can not scramble right away and let if form pancake style Of course, double ingredients for more people. Alternative, which I prefer: I like the matzah very crispy in my eggs so I eliminate the draining of the pieces which softens them. I just add matzah pieces dry, and then scramble
