Soup - Creme O' Asparagus

Easy, quick, light and perfect for summer.

Ingredients

  • 1 pkg. 10-12 oz. frozen asparagus, chopped (I buy mine at Trader Joe's)
  • 4 cups chicken broth, salt to taste
  • 6 oz. cream cheese

Preparation

Step 1

Put broth in a 2 quart pan add the chopped asparagus. Bring to boil, simmer uncovered for 10 minutes. Salt to taste.

Cut cream cheese into 1/2" cubes and put in dishes. Pour in the hot asparagus soup and serve.
