Ingredients
- 1/3 cup white wine or champagne vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon local honey
- 1/2 cup extra virgin olive oil
- Pinch of salt and ground pepper

In a lidded jar, shake the vinegar, mustard and honey to blend. Add olive oil and shake well until combined: season with salt and pepper.
