Boiled custard was a standard Christmas dessert served with pecan pie or fruit cake when I was a kid. The nice thing about this recipe is that you don't have to have anything special on hand to make a special dessert. I believe that it was in one of the original Joy of Cooking cookbooks. The state of Virginia claims the original.

Ingredients

  • 1 qt. milk
  • 6 eggs, beaten slightly
  • 1/2 c. sugar
  • 1/8 t. salt
  • 1 t. vanilla

Preparation

Step 1

Scald the milk in a heavy pan or double boiler. Beat eggs slightly and add to the milk. Add sugar and salt. Cook until custard just starts to thicken. It will coat a clean silver spoon when done. Do not overcook! Remove from heat and stir in vanilla.
