Ingredients

  • 2 lbs. "boiling" potatoes, peeled
  • 1 cup milk
  • 1 6-cup flameproof baking dish, 2 inches deep
  • 1 small clove garlic, mashed
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 3-4 tbsp. butter

Preparation

Step 1

1. Preheat oven to 425 degrees F.
2. Slice potatoes 1/8 inch thick and drop into a bowl of cold water.
2. Bring milk, garlic and salt and pepper to a boil in a small saucepan. Drain the potatoes and add to the boiling milk. Pour mixture into a baking dish.
3. Distribute butter over the potatoes.
4. Bake in middle level of preheated oven for about 25 minutes, until milk is absorbed, potatoes are tender and top has browned. This can be served with roasts, steaks or chops.
