Ingredients
- LEMON BUTTER SAUCE:
- 4 chicken breasts
- kosher salt and fresh ground pepper
- olive oil
- 2 oz goat cheese
- lemon butter sauce (see recipe)
- 10-12 pieces sundried tomatoes
- 1 T chopped fresh basil
- 1 tsp butter
- 1 T finely chopped garlic
- 1 T finely chopped yellow onion
- 2 T white wine
- 2 T lemon juice
- kosher salt
- pinch of white pepper
- 1 stick cold unsalted butter cut into small cubes

Step 1
Season chicken on both sides with salt and black pepper. Dab with olive oil. Grill chicken til cooked to a minimum internal temp of 165 degrees. Then place a slice of goat cheese on top of chicken and continue to cook til warm
Place lemon butter sauce in a saute pan over medium-low heat and add sundried tomatoes and basil. Heat gently til hot but do not over heat as sauce will break. When goat cheese is warm, plate and spoon sauce over top.
SAUCE DIRECTIONS:
Place butter, garlic and onion in a small pan over med-high heat and saute til garlic and onions are soft and transparent. Do not let garlic and onion burn.
Add white wine, lemon juice, salt and white pepper, bring to a boil then reduce heat to medium and let it reduce to about 1/4 of what you started with.
Reduce heat to low and gradually add the cold butter, beating with a wire whisk to allow butter to blend and melt into a creamy sauce.
