Ingredients

  • For the Soaker:
  • 1/4 10 10 Grain Cereal
  • 2 18g Thick Rolled Oats 18g
  • 2 24g Quinoa 24g
  • 2 26g Flax Seed 26g
  • 2 22g Sunflower Seeds 22g
  • 1/3 79g Water 79g
  • For the Dough:
  • 1/2 1 142g, Milk (or other nutmilk) + 1 tsp Apple Cider Vinegar 142g, whole milk will work here too
  • 1 1/2 264g White Unbleached Bread Flour 264g
  • 1 1/2 C Whole Wheat Bread Flour
  • 3 46g Brown Sugar 46g
  • 1 1/2 10g Sea Salt 10g
  • 1 6g Quick Rise Yeast 6g
  • 3 Tbs Cooked Brown Rice
  • 1 1/2 Tbs Maple Syrup
  • 3/4 C Water room temperature (178g)

Preparation

Step 1

For the Soaker:
The day before making the bread, prepare the soaker by placing the cereal, rolled oats, quinoa, flax, sunflower seeds and water into a small bowl. Leave out at room temperature overnight.

1. Place all ingredients in the bread machine in the proper order, run at whole wheat cycle
