Ingredients

  • 1 c. onions, chopped
  • 3 cloves garlic, chopped or garlic powder if you prefer
  • 3 T. oil
  • 1 lb. garlic flavored, smoked pork sausage, cut in bite sized pieces
  • 5 c. beef stock
  • 1 can kidney beans with liquid
  • 1/2 head green cabbage
  • 6 small new potatoes, scrubbed and quartered
  • 1/4 c. vinegar
  • 1 c. catsup

Preparation

Step 1

Saute onions and garlic in the oil. When the vegetables are just transparent add sausage slices and brown lightly. Add beef stock and all other ingredients. Bring soup to a boil -- stirring to keep the bottom of the pot from burning. Reduce heat. Allow to simmer 35 - 40 minutes. Correct seasonings to taste.

Freezes well. Do not freeze potatoes. Cook and at at the time of serving. Easy to double this recipe to serve a crowd. Keep sausage at 1 lb.
