Ingredients
- 1 cup lentils, rinsed
- 1 leek, sliced
- 1 carrot, chopped
- 1 8 oz packaged baby portobellos, sliced
- 2 cloves garlic
- 1 quart vegetable broth
- 1 TB cumin
- 1 tsp cayenne
- 1 tsp paprika
- 4 small bay leaves
- 1 package spinach
- 2 T white balsamic vinegar

Instructions
Put all ingredients, except spinach and vinegar, in crockpot. Cook on high for 4 hours, or low on 8 hours. About 10 minutes before the end of cooking add the spinach and the vinegar.
Delicious, hearty, and vegetarian for those going without meat.
Preparation Time: 10 minutes
Cooking Time: 4 hours on crock pot, 1 1/2 on stove
