Ingredients

  • 4 slices whole wheat bread
  • 1 tsp olive oil
  • 1 tsp whole grain dijon mustard (I just used regular dijon)
  • 2 oz low fat cheddar cheese divided
  • 1/2 Granny Smith apple or other tart apple thinly sliced length wise

Preparation

Step 1

One: Lay bread out on clean work surface and lightly brush top side of each piece with olive oil. flip bread over and spread with mustard. divide half of the cheese between the slices then cover cheese with a layer of apples. then follow with remaining cheese and top with other slice of bread.
Two: Heat oil in skillet over medium low heat - add sandwhiches and cook until lightly golden brown and cheese has melted about 6 minutes.
