Ingredients

  • 600 g/1 lb 5 oz lamb loin, fat removed, cut into slices (3 cm x 1 cm/ 1 1/2 x 1/2 cm),
  • 800 g/1 3/4 lb radicchio, sliced,
  • 1 ActiFry spoon virgin olive oil,
  • 1 egg,
  • 50 g/2 oz pine nuts,
  • juice of 3 lemons,
  • 1/2 glass water,
  • 1/2 glass dry white wine,
  • Salt, pepper

Preparation

Step 1

Wash the radicchio and blanch for 10 minutes. Drain. Put the lamb in the ActiFry, pour in the oil and cook for 5 minutes. Season with salt and pepper, add 1/2 glass water and 1/2 glass white wine. Cook for 10 minutes.

Add the radicchio and leave to cook 5 minutes. Add the toasted pine nuts right before serving. Adjust the seasoning if necessary.

Lemon sauce: Beat an egg and whisk in the lemon juice. Slowly pour this mixture into the cooking liquid, whisking constantly.
