Ingredients
- 1 oz sesame oil
- 2 T minced lemongrass or lemongrass paste or lemon zest
- 1 red bell pepper minced
- 1 red onion minced
- 1 tsp prepared wasabi
- 1/4 c tamari soysauce
- 2 T red Szechwan paste
- 1 can (15oz) coconut milk
- 1 c heavy cream
- 1 boneless quartered chicken, skin on
- 1 T basil
- 1 T cilantro
- salt and pepper to taste
- COOKED NOODLES OR RICE

Step 1
In 4 qt pan with lid, over medium heat, place sesame oil and heat til wisps of smoke appear. Add onions, bell pepper and lemongrall and saute til lightly caramelized and soft. Season chicken with salt and pepper and carefully place into sauce pan skin side down. Let skin become caramelized about 4-5 minutes. Turn chicken quarters over. In saucepan with chicken add soy sauce, szechwan paste, wasabi, coconut milk and heavy cream. Increase heat to high, stir til well combined and sauce begins to boil. Reduce temp to low, simmer, cover with lid and cook another 20 minutes.
Add basil and cilantro and serve over rice or noodles.
