Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 8 ounces Velveeta
  • 2 cups frozen corn (from 12 ounce bag)
  • 3 cups whole tortilla chips
  • 2 tablespoons Chipotle Rub (divided use)
  • 1 tablespoon garlic canola oil
  • 2 cans chicken broth (may need twice this much)
  • Grated cheddar (optional)
  • Diced fresh tomato (optional)
  • Snipped fresh cilantro (optional)

Preparation

Step 1

Trim excess fat from chicken and cut into ½-inch cubes. Combine Velveeta (cut into 1-inch cubes), corn and 1 tablespoon Chipotle Rub. Finely process tortilla chips and set aside. Add garlic oil and 1 tablespoon chipotle rub to chicken. Mix well.

Combine all ingredients (except optional toppings and tortilla chips) in large saucepan. Bring to a simmer and cook uncovered over medium heat 14-15 minutes or until cheese is melted and mixture is smooth, stirring occasionally. Add crushed tortilla chips. Cook 4-6 minutes or until thickened and chicken is cooked through. Top with optional ingredients. Serve with fresh fruit salad.
