Deana's Vegetarian Lasagna

Ingredients
- Lasagna:
- 2 tablespoons olive oil
- 2 onions, chopped
- 2 clove garlic, minced
- 1 large carrot, grated
- 1 green pepper, chopped
- 1 large celery stalk, chopped
- 28 ounces crushed tomatoes, canned
- 6 ounces tomato paste
- 2 cups water
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 2 teaspoons dried parsley
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- 1 bay leaf
- 9 lasagna noodles, (from an 8 oz. box)
- 24 ounces cottage cheese, lowfat
- 2 eggs, beaten
- 1/2 teaspoon pepper
- 2 tablespoons dried parsley
- 1/2 cup grated parmesan cheese
- 12 ounces mozzarella cheese, part skim milk, thinly sliced or shredded

Directions:
Make Deana's Marinara Sauce
Use the Marinara Sauce ingredients -- and Saute, all vegetables in olive oil till tender but not browned. Add rest of ingredients. Bring to a boil, Then simmer 1 hour. Remove Bay leaf
Use to make Vegetarian Lasagna
* Optional-----Whiz lowfat or non-fat cottage cheese in food processor to smooth (if desired) can use ricotta in place of cottage cheese.
Cook noodles according to package directions until al dente. (firm to the bite); drain. Combine cottage cheese, eggs, pepper, parsley flakes, and parmesan cheese. Grease a 13x9x2-inch baking dish. Place a layer of noodles in dish, spread half the cottage cheese mixture over noddles, layer with 1/3 of the mozzarella, top with 1/3 of the sauce mixture. Repeat the process, then topping with a third layer of noodles and covering with last of sauce and then last third of mozzarella- Sprikle with a little extra parmesan cheese if desired. Wrap dish with foil and freeze for a later meal or cook now.
To prepare for serving, thaw the lasagna. Bake uncovered in pre-heated 350F. oven for 30 to 40 minutes.
NOTES : Notes Layer 3/4 cup sauce 3 Noodles then 2 cups sauce, 1/2 cottage cheese mixture 4 ounces (about a cup) mozzarella, 3 noodles, 2 cups sauce the rest of the cottage cheese mixture, 4 ounces (about a cup) mozzarella cheese, 3 noodles, 3/4 cup sauce last 4 ounces mozarella cheese-- You may have some sauce left over use for another purpose or put more sauce on top if you like your lasagna extra saucy.
