    ounces flour

    level tsp baking powder

  • ½

    tsp salt

  • 4

    ounces butter or margarine cut into chunks

  • 4

    ounces sugar

  • 4

    ounces sultanas (golden raisins)

  • 8

    fluid ounces milk.

  • Topping: 1 small egg beaten.


Preheat oven to 425 degrees. Grease 2 Baking Sheets place first 5 ingredients in a bowl. Rub between fingers and thumbs until mixture resembled bread crumbs. Stir in sultanas, then, while mixing with a wooden spoon,add milk a bit at a time. When milk is absorbed into the mixture, knead to make a smooth ball. Split the ball in half. Roll first half out to 1/2" thick. Cut scones out with a cookie cutter (about 2.5")and arrange on a cookie sheet leaving 1/2" space between each, to allow for spreading and rising. Gather leſt-over dough together and roll out again (repeat until dough is used up). Repeat the process with the second ball of dough and arrange on second cookie sheet. Brush the beaten egg over the top of each scone. Place in oven and cook for about 15 minutes until each scone is evenly browned. Serve with clotted cream. butter and Jam. Absolutely Delicious!
