Ingredients
- 1 c steel cut oats
- 4 c water, divided
- 1 T lemon juice or liquid whey (from draining yogurt into cheese)
- salt to taste - approx. 1/2 tsp

Step 1
In a saucepan, dry toast the oats over medium high heat, stirring constantly, until they smell nutty and toasty. Turn off heat. Add 1-2 cups water and the lemon juice or whey and stir. Cover and let sit overnight. In the morning, add the remaining water and bring to light boil. Add salt, turn down heat and cook, stirring often, until creamy, tender, and liquid is absorbed, about 15-20 minutes.
Serve with your favorite oatmeal toppings. (Brown sugar, maple syrup, nuts, cinnamon, butter, etc.)
(Another recipe said to toast the oats with 1 T butter right before cooking and not soaking overnight. Could add dried fruit when cooking.)
