Ingredients

  • 1 C boiling water
  • 2 C 100% Bran cereal
  • 1/2 C butter
  • 1 egg
  • 1/2 C milk
  • 2 T molasses
  • 1 1/2 C flour
  • 1 C chopped dried apricots
  • 1 C chopped pecans
  • 1/2 C brown sugar
  • 1/2 tsp salt

Preparation

Step 1

Preheat oven to 400 line muffin tin.

In a small bowl, pour boiling water over cereal and butter. Stir until butter melts and set aside to cool.

Combine egg, milk, and molasses. Stir into cooled cereal.

Combine flour, apricots, pecans, sugar, baking powder and salt. Add cereal mixture, stirring just til moistened and blended.

Spoon into muffin tin, filling to the top. Bake 15 - 20 minutes or until golden.
