Ingredients

  • 5 cups thinly sliced yellow onions(1 1/2 lbs.)
  • 3 tbsp. butter
  • 1 tbsp. vegetable oil
  • 1 tsp. salt
  • 1/4 tsp. sugar
  • 3 tbsp. flour
  • 3 (10 3/4 ) cans beef bouillon
  • 3 cups boiling water
  • 1/2 cup dry white wine (sub. something)
  • Salt and pepper to taste
  • 2 oz. swiss cheese, slivered
  • 16 (1/2-1 in.) French bread slices
  • 1/2 cup grated parmesan cheese
  • 1 tbsp. melted butter

Step 1

Cook onions slowly with butter and oil in heavy, covered 4 qt. saucepan for 15 min. Stir in salt and sugar. Cook uncovered over moderate heat 35-40 min, stirring often until onions are a deep golden brown. Sprinkle with flour; stir 3 min. Remove from heat; add boiling bouillon and water to onion mixture, blend well. Add wine and seasonings; simmer partially covered, 35 min. While soup is simmering, place 1 layer of french bread slices on cookie sheet and bake at 325 for 30 min. or until they are dried and golden brown.

Bring soup to boil; pour into oven-proof tureen. Stir in swiss cheese; float toast rounds on top. Cover toast with parmesan cheese and sprinkle with melted butter. Bake at 325 for 20 min. Broil 2 minutes.
