Ingredients
- 1/3 cup butter
- 1/2 cup chopped onion
- 1/4 to 1/2 cup chopped green pepper
- 2 cloves garlic, minced
- 2 cups sour cream
- 2 tsp. lemon juice
- 2 tsp. curry powder
- 3/4 tsp. salt
- 1/2 tsp. ginger
- Dash chili powder
- Dash pepper
- 3 cups cleaned, cooked or canned shrimp, split lengthwise in half (about 2 lbs. in shell)

Step 1
Melt butter; add onion, green pepper, garlic. Cook till tender but not brown. Stir in sour cream, lemoin juice, and seasonings; add shrimp. Cook over low heat, stirring constantly, just till hot through. (Sauce is traditionally thin.) Serve over hot rice or yellow rice. Offer condiments- coconut, chopped peanuts, raisins, chutney.
Yellow Rice: To 2 cups boiling water, add 1 tsp. salt and 15 grains saffron. Stir in 1 cup uncooked rice. Return to boil, reduce heat to low cover, and cook till tender, about 25 min. Makes 3 cups.
