Ingredients
- 1 cup old-fashioned oats
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 3/4 cup packed brown sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 tsp. vanilla extract

Step 1
In a small bowl, combine the oats, flours, brown sugar, baking powder and salt. In another small bowl, whisk the eggs, milk, oil and vanilla. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees for 15-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
