Ingredients

  • 4 cups water
  • 8 tomatillos, husks removed and rinsed
  • 1 medium ripe avocado, peeled and pitted
  • 1 small onion, halved
  • 1 jalapeno pepper, seeded
  • 1/3 cup fresh cilantro leaves
  • 1/2 tsp. salt
  • Tortilla Chips

Preparation

Step 1

In a large saucepan, bring water to a boil; add tomatillos. Reduce heat; simmer, uncovered, for 5 minutes. Drain. Place the tomatillos, avocado, onion, jalapeno, cilantro and salt in a food processor; covewr and process until blended. Transfer to a bowl. Refrigerate for 1 hour. Serve with tortilla chips.
