Chopped Holiday Salad

Arrange vegetables on a large rectangular tray so that each person can choose the combination they prefer. If you like a really moist salad, double the dressing.

Ingredients
- 1 (15 to 19oz) can cannellini beans (white kidney beans)nrinsed and drained
- 2 bell peppers, seeded and cut into ite size pieces
- 1 medium cucumber,cut into bite size pieces(3 cups)
- 1/2 head red cabbage, coarsely chopped(2 cups)
- 1/2 of a 16 oz pkg radishes,halved (1 1/2 cups)
- 8 oz feta cheese, cut into bite size pieces
- Flat leaf parsley, chopped
- dressing
- 1/4 c evoo
- 1/4 c lemon juice
- 1 tbs honey
- 1/2 tsp sea salt
- 1/4 tsp pepper, freshly ground

Preparation
Step 1
Arrange vegetables and sprinkle all with parsley
Drizzle dressing evenly over all.
I prefer double dressing
refrigerate 2 hours
