Ingredients
- 1-3/4 cups uncooked elbow macaroni
- 1/3 cup finely chopped onion
- 1/2 cup fat-free evaporated milk
- 1-3/4 cups 2% cottage cheese
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1-3/4 cups shredded reduced-fat cheddar cheese
- 2 Tbsp. minced fresh parsley

Step 1
Cook macaroni according to package directions. Meanwhile, place onion in a large microwave-safe bowl. Cover and microwave onion on high for 1 to 1-1/2 minutes or until tender; drain. In a small food processor, combine the milk, cottage cheese, mustard, salt and pepper; cover and process until smooth. Drain macaroni; stir into onion along with cheddar cheese and parsley. Stir in cottage cheese mixture. Pour into a 1-1/2-qt. baking dish coated with cooking spray. Bake, uncovered, at 350 degrees for 20-25 minutes or until lightly browned.
