Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 4 ounces shredded cheddar
  • 1 can cream of mushroom soup
  • 3/4 cup milk
  • 1 small lemon
  • 3 cups frozen broccoli florets (from 12 ounce bag)
  • Bread crumbs (equal to 4 slices of sandwich bread)
  • 1/2 ounce grated Parmesan cheese
  • 2 tablespoons garlic canola oil (divided use)
  • 1 tablespoon Lemon Pepper Rub
  • Egg noodles

Preparation

Step 1

Trim excess fat from chicken and cut into 1-inch cubes; add 1 tablespoon garlic oil and lemon pepper rub. Mix well.

Mix together soup, milk, juice from squeezed lemon and broccoli.

Combine bread crumbs, Parmesan cheese and 1 tablespoon of garlic canola oil.

Mix together sauce/broccoli mixture, chicken and cheddar cheese and cook on stovetop 10-13 minutes or until chicken is no longer pink, stirring halfway through. Pour into baking dish sprayed with cooking spray. Sprinkle bread crumb mixture over chicken mixture. Place dish 2-3 inches from heating element and broil 1-2 minutes until top is golden brown. Serve over hot cooked egg noodles.
