Ingredients
- 1 1/2 lbs boneless beef chuck
- 2 medium or 1 large onion(s), chopped
- 3/4 cup red wine or beef broth
- 1 1/2 tbsp Hungarian sweet paprika
- 3/4 tsp salt
- 1 small green pepper, cut into 1 inch squares
- Sour cream or Greek plain yogurt
- Hot buttered noodles

Step 1
Cut beef into 1 1/2 inch cubes. Saute over medium to high heat with a little oil and brown slowly until richly browned on all sides. Add onions. Cook 2 to 3 minutes or until onions are softened. Add the red wine or broth (or a little of both). Paprika, salt and green pepper, blending well. Cook slowly, covered, without allowing to boil, for about 2 hours or until meat is very tender. Add more liquid if needed, but it should not be soupy. Season to taste. Serve over noodles and add sour cream.
For 8 servings, double the ingredients, but use only 1 1/2 cups broth and/or wine.
