Ingredients

  • FRUIT:

  • 4

    cups mixed fruit (2 lbs)

  • 1

    cup chopped walnuts or pecans

  • 2

    cups golden raisins

  • 1/2

    cup brandy or fruit juice

  • 2

    cups dark raisins

  • 1/2

    cup flour

  • BATTER:

  • 1/2

    cup butter

  • 1

    cup packed brown sugar

  • 1

    tsp vanilla

  • 1/2

    tsp baking soda

  • 1/2

    tsp allspice

  • 1/2

    cup strawberry jam

  • 3/4

    cup granulated sugar

  • 5

    eggs

  • 1 1/2

    cup flour

  • 1/2

    tsp cinnamon

  • 1/2

    tsp mace

Directions

Combine fruit, raisins, and brandy - let stand overnight. (I ALSO ADD THE NUTS NOW) The next day add 1/2 cup flour (add nuts if not added the day before). Toss fruit mixture and flour, to mix them together.Cream the butter with granulated sugar and add brown sugar, cream well. Beat in eggs one at a time, and then beat in the vanilla. Combine flour, soda, and spices, then blend them into sugar mixture. Blend in strawberry jam. Thoroughly mix floured fruit into sugar mixture Grease 2 (9 by 5) loaf pans and line them with waxed paper. Bake at 275 degrees for 3 to 3 1/2 hours or until cake is firm to touch or comes out clean. Cool completely before removing cake from pan (30 rains). When cool, wrap in foil and store at least for one week, before slicing.
