This should be enough flour for noodles and flour the board. Put flour in bowl. In smaller bowl, break eggs and stir them. Make a well in the flour and place the eggs in the well. Gradually stir in flour to make soft dough. Place on board with remaining flour. Work in more flour to desired texture. Separate into 2 balls of dough. When enough flour is worked, roll to 1/8-inch thick. Dry 1 hour, turn dry 1 hour more, roll up and cut. Dry a little then place in a colander and shake excess flour off. Noodles may be cooked, dried or frozen. Either way they will be somewhat brittle and care must be taken when handling them. To cook: place carefully in hot boiling meat broth; stir quite a bit until froth dies down. Cook, uncovered, for 20 to 25 minutes, cover and simmer for 10 minutes more or until noodles are tender and done. Add cooked meat last 10 minutes, if desired.
