- 5 eggs (separated)
- 1 cup sugar
- 1 lb. cream cheese (room temperature)
- 1 cup sour cream
- 2 Tbsp. flour
- 1 tsp. vanilla

Step 1
Beat egg yolks until thick and lemon colored. Gradually beat in sugar. Break up cream cheese. Add to egg yolk mixture beating until smooth. Add sour cream, flour and vanilla. Continue beating until smooth. Beat egg whites until stiff but not dry. Gently fold into cheese mixture. Heat oven to 275 (slow). Butter 9” spring form pan. Dust bottom and sides of pan with a mixture of ½ cup graham cracker crumbs, ¼ tsp. cinnamon, 1Tbsp. sugar, ¼ tsp. nutmeg. Pour filling into prepared pan. Bake 70 minutes. Turn off oven and leave 1 hour without opening oven door. Top with 1 can crushed pineapple (drained and thickened with corn starch) when cake has cooled. Remove cheesecake from pan just before serving.
