Stroganoff Casserole

Ingredients
- Gravy base for stroganoff sauce:
- 1 1/2 cup sliced left over steak
- (can substitute 1 lb ground beef)
- 1 can cream of mushroom soup
- 2 lbs potatoes sliced
- 1 cup sour cream
- 3 tablespoons vegetable oil
- 2 tablespoons flour
- 3 cups beef broth
- 1 teaspoon onion powder
- 1 teaspoon ole bay seasoning
- 1 teaspoon garlic
- salt and pepper
- Can substitute store bought gravy

Preparation
Step 1
Peel potatoes if desired and slice. Boil for 5 minutes in salty water. Drain and cool.
Add 3 tablespoons oil to sauce pan on medium heat. When oil warms up add flour and cook for about 5 minutes or until the flour turns a beige color and gives off a slight nutty smell. Add 3 cups beef broth slowly, stirring consistantly as you pour in liquid. Let simmer on low heat until thickened. Add in onion powder, salt, pepper, garlic and ole bay seasoning. Add sour cream and mushroom soup. Heat through. Add sliced meat or ground beef to stroganoff sauce. and take off of the heat.
Layer sliced potatoes at the bottom of a medium sized greased casserole dish. Cover with stroganoff mixture. Bake at 350 for 20 minutes. Let sit for 5 minutes before serving.
Make it different!!! Swap out pasta, rice or even tater tots for the sliced potatoes. Cover with cheese for an even better meal.
