Ingredients
- 1 lb ground beef (sub ground turkey or chicken if desired)
- 1 lb frozen mixed vegetables
- 1/2 cup diced onion
- 3 cups beef stock
- 2 tablespoons flour
- 6 slices bacon cut into small pieces
- 2 lbs yukon gold or red potatoes
- 1 stick butter
- milk
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper

Step 1
Peel and cut potatoes and boiled in salted water until tender.
Meanwhile, brown ground beef and bacon. Drain about half of the meat drippings. Add onion and cook until onion is tender. Add flour and seasonings and cook for two minutes on medium heat. Add beef broth slowly stirring until combined. Add vegetables and bring to a simmer. Reduce heat to low and cook until broth thickens.
By this time potatoes should be done. Drain, mash with butter and milk to desired consistancy. Add salt, pepper and garlic to taste.
Spray pam at bottom of 9 x 12 baking dish. Pour meat and veggie mixture into bottom of the dish. Cover with mashed potatoes and bake at 350 for 15-20 minutes.
Let sit 5 minutes before serving
