Ingredients

    eggs

  • 1/2

    lb raw bacon, chopped into small pieces

  • 1

    10-oz package frozen spinach (283.4 grams), defrosted, drained and dry

  • 4

    oz cheddar cheese, grated

  • 4

    Tbsp shredded Parmesan cheese

  • 2

    oz half-and-half

  • 2

    Tbsp butter

  • 1/2

    large onion or 1 small onion, chopped

  • 1

    cup mixed vegetables such as mushrooms, red peppers or whatever you have

  • Cayenne and pepper to taste

Directions

Saute onion and vegetables in butter until translucent. Add spinach. In a separate pan, cook bacon. Drain and set on paper towel. Beat eggs and cream, then add spinach/onion and veggie mixture and cooked bacon. Pour into 12 large muffin tins lined with paper muffin cups. Add grated cheddar cheese to each one and stir to mix up all ingredients. Sprinkle Parmesan cheese on top and a little ground pepper and cayenne to taste. Cook in 350 oven for 15 minutes, or until cooked through.
