Ingredients
- 1 pound smoked sausage, sliced
- 1 to 1 1/2 pounds ground beef
- 1 cup chopped green pepper
- 1 cup chopped onion
- 1 clove (I use more) of garlic, diced
- 1 tablespoon all-purpose flour
- 1 (28 oz.) can diced tomatoes,undrained
- 2 1/2 cups water
- 2 tablespoons chopped fresh parsley
- 2 cups uncooked regular rice (Uncle
- Ben's Converted)
- 2 tablespoons Worcestershire sauce
- 2 teaspoons salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon Tony's Creole seasoning

Preparation
Step 1
Cook sausage until browned in a large Dutch oven. Remove sausage from pan.
Cook ground beef in the same pan until browned. Drain off all but 2
tablespoons pan drippings. Add green pepper, onion and garlic; cook until
vegetables are tender. Add flour, and stir until well blended. Stir in
tomatoes, water and parsley; bring to a boil. Add remaining ingredients and
return to a boil. Reduce heat and simmer, covered, about 30 minutes. Add
water if needed.
