Ingredients
- 1 1/4 cup whole or lowfat milk
- 1 tsp dried parsley flakes
- salt and pepper to taste
- 2 2 oz packages of instant mashed potatoes, prepared
- 2 green onions, finely sliced
- 5 eggs
- 1 cup cooked diced ham
- 1 cup cheddar cheese, shredded

Preparation
Step 1
Preheat the oven to 350. Coat a 10 inch pie pan with cooking spray. In a medium bowl, combine the potatoes, parsley, and onions. Add the salt and pepper to taste. Beat 1 egg and add to the potato mixture. Make a crust by pressing the potato mixture into the bottom and up the sides of the pan. Layer the ham and cheese over the potatoes. Beat the remaining eggs with the milk and pour over the ham and cheese. Bake for 45-55 minutes or until set. Let stand 10 minutes before serving.
