Grandmother's Chocolate Cake

This is my paternal grandmother's recipe for Chocolate Cake. I copied it myself from her handwritten copy in 1960 when I was 10 years old and was thrilled to find it again as I was going through every scrap of paper I ever saved with a recipe. We all change recipes and the peppermint was an addition that my mother and I made to this one. I actually entered this cake into a 4H contest once and won a ribbon for my Grandmother's Chocolate Cake.

Ingredients

  • 1/2 c. shortenng
  • 2 c. sugar
  • 3 eggs
  • 1/2 c. coco, made into a paste with warm water
  • 2 c. flour
  • 3/4 c. buttermilk
  • 2 t. soda
  • 2 T. cold water
  • 2 t. vanilla
  • 1/2 . t. peppermint extract

Preparation

Step 1

Cream together the shortening and sugar. Add eggs and beat until smooth. Add coco paste. Add flour with buttermilk alternating and beat after each addition. Dissolve soda in cold water with vanilla and peppermint. Add to batter. Add boiling water. Bake in two 9 inch cake pans at 350 degrees until done. Top with favorite chocolate frosting.
