Ingredients

  • Filling:

    lb. almond paste (kernel paste)

  • 2

    cups sugar

  • 3

    eggs (reserve one white to brush banket before baking)

  • Crust:

  • 4

    cups flour

  • 1

    lb. butter

  • 1

    cup cold water

  • dash of salt

Directions

Let filling stand in bowl while preparing crust. Blend flour, butter, water, and salt like pie crust. Pat into 8" round pan. Chill. (dough may be refrigerated overnight). Chill filling in separate 8" round pan. Cut each of filling and crust into 8 wedges. Roll dough into a rectangle about 4x13. Form filling into a rope about 12" long and about as round as a dime. Place on dough and fold over, moistening along edge to seal. Place seam down on cookie sheet. Brush top with slightly beaten egg white. Sprinkle with sugar and cut vents with sharp knife.
