Pecan or Walnut Crescent cookies

Ingredients
- 2 cups whole pecans or walnuts, chopped fine
- 2 cups all-purpose flour, preferably bleached
- 3/4 tsp table salt
- 2 sticks unsalted butter, softened
- 1/3 cup superfine sugar (you can take granular sugar and mix in food processor for 30 seconds)
- 1 1/2 tsp vanilla extract
- 1 1/2 cups confectioner's sugar for rolling cooled cookies

Step 1
1. Adjust oven racks to upper and lower middle positions and heat oven to 325 degrees. Mix 1 cup chopped nuts, flour, and salt in medium bowl and set aside. In workbowl of food processor fitted with steel blade, process remaining chopped nuts until texture resembles coarse cornmeal, 10 to 15 seconds (do not over process); stir into flour mixture and set aside.
