Ingredients

  • 6 medium size potatoes (red)
  • 1 pint sour cream
  • 10 oz. can cream of chicken soup
  • 1 1/2 cups grated cheese
  • 1/4 cup soft butter
  • Salt and pepper to taste
  • 1 1/2 cups crumbled corn flakes

Step 1

Boil potatoes a day ahead. Peel and grate cold potatoes into a bowl. Set aside. Mix together sour cream, soup, 1/4 cup butter and grated cheese. Mix together with grated potatoes using a plastic fork to prevent further mashing. Add salt and pepper. Place in buttered 9 by 13 in. pan. Top with corn flake mixture. Bake 1/2 hour at 350.
