Ingredients
- 1 aubergine, diced,
- 2 courgettes, sliced,
- 1 carrot, sliced,
- 1 fennel, cut into large pieces,
- 2 tablespoons peas,
- 1 small green pepper, finely chopped,
- 1 small red pepper, finely chopped,
- 1 large onion, cut into large pieces,
- 2 tablespoons tomato paste,
- 1 glass white wine,
- 1 tablespoon thyme,
- 1 coffee cup finely chopped parsley,
- 1 tablespoon olive oil.

Preparation
Step 1
Put the green and red pepper in the ActiFry. Cook for 10 minutes without adding anything else.
Add the oil and continue to cook for 5 minutes. Add the wine and tomato paste mixed with a glass of water. Season with salt, pepper and add the thyme. Cook for 15 more minutes.
Open, add the chopped parsley and serve in a dish. You can eat this vegetable sauce alone or serve it with pasta or rice pilaf with butter.
*Chef Recommendations:*
Try adding two tablespoons of finely chopped basil, and a handful of small black olives along with a dash of balsamic vinegar. You can also replace the thyme with coarsley chopped coriander seeds.
