Ingredients
- 1 courgette, 200g/7 oz
- 250 g /9 oz fresh mushrooms
- 1 medium aubergine
- 1 red pepper
- 1 green pepper
- 2 ActiFry spoons garlic cloves
- Parsley
- 2 ActiFry spoons virgin olive oil
- 100 ml/3 1/2 fl oz dry white wine
- Salt and pepper

Preparation
Step 1
Wash the vegetables. Chop the courgette and the aubergine unpeeled in slices, salt and pepper and leave for approximately 15 minutes to sweat. Then dice. Clean the mushrooms, slice thinly and cut in half. Cut the peppers in thin strips.
Place the aubergine, courgette, peppers and mushrooms in ActiFry. Pour the oil and cook for 5 minutes.
Crush the garlic with the parsley. Add to the ActiFry with the white wine. Season. Cook for 10 more minutes.
Serve as a starter.
