  • 8 , 5-ounce chicken boneless, skinless chicken breasts OR thighs
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 TB olive oil
  • 1 cup onion, finely chopped
  • 2 TB flour
  • 2 cups water or chicken stock
  • 1 1/2 tsp. dry mustard
  • 1 TB Dijon mustard

Directions
Sprinkle chicken with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. When the pan is hot, brown the chicken for 2 minutes on each side.

Next, mix in the onion and continue cooking for 1 more minute.

Sprinkle the flour on the chicken, turning the pieces so that they are all coated. Cook about a minute to lightly brown the flour.

Add the water (or chicken stock) and stir to dissolve the flour until the mixture comes to a boil. Lower the heat, cover the skillet and boil gently for 5 minutes.

Remove the chicken to a plate and keep warm.
Continue cooking the sauce to reduce it about 1 1/2 cups. Mix the dry mustard with the Dijon mustard and stir until smooth. Store the mustard mixture into the sauce and heat, but do not allow it to boil after the mustard has been added.

Place the chicken back into the sauce and cook over low heat 15 minutes to develop the flavor.
