Ingredients
- 1 onion diced
- 1-2 stalks celery diced
- 1 T butter or evoo
- 3 c water, divided
- 1 10oz pkg mixed veggies - I used 1/2 pkg mixed with corn, bean, carrots and 1/2 pkg peas
- 2 chicken, beef or veggie bouillon cubes
- 1 can evaporated milk
- 1 8oz pkg velveeta - I used almost double this!

Preparation
Step 1
Stir-fry onions and celery in butter or evoo, to soften. Add 1 c water and veggies. Cover and simmer over low heat 10 min. or til veggies are tender. Stir in 2 cups water with bouillon and bring to boil. Reduce heat and add evaporated milk and velveeta over low heat, stirring constantly til cheese melts and soup is heated thru. Do not boil
