Ingredients

  • 600 g/1 lb 5 oz pork tenderloin, cut into pieces,
  • 3 onions, sliced,
  • 2 cloves garlic, crushed,
  • juice of 3 lemons,
  • 80 g/3 oz raisins,
  • 50 g.2 oz dried apricots,
  • 3 ActiFry spoons balsamic vinegar,
  • 1 ActiFry spoon ground ginger,
  • 5 ActiFry spoons sugar,
  • 2 ActiFry spoons olive oil,
  • Salt, pepper

Preparation

Step 1

Mix the vinegar, lemon juice, ginger and sugar in a bowl. Add the crushed garlic, salt and pepper.

Marinate the pork in this mixture for 1 hour. During this time, soak the raisins in warm water and cut the apricots into thin slices.

Fry the onions with the olive oil for 15 minutes. Add the meat, the marinade, the raisins and the apricots and cook for 8 minutes.
