Ingredients
- 3 medium zucchini, washed and ends trimmed
- 1 large chicken breast, cut into 1" inch chunks
- 2 cloves garlic, minced
- 1/2 teaspoon fresh ginger, minced
- 1 each of red and yellow bell pepper, thinly sliced
- 2 cups of a mix of snow peas, bok choy and thinly sliced carrots
- 1/4 cup chopped fresh cilantro, for garnish

Step 1
Cut zucchini into noodles with spiralizer, julienne tool or mandolin. Set aside on a plate covered with paper towels and pat dry.
2. Season chicken with salt and pepper to taste. Heat 1 teaspoon olive oil in a large skillet / saute pan on medium high heat. Add chicken and cook until brown on all sides, about 3-4 minutes. Transfer from pan onto a plate. Set aside.
3. While chicken is cooking, in a medium bowl, gently whisk together all the ingredients for the sauce, until combined. Set aside.
4.Add additional 1-2 teaspoons of olive oil to the same skillet, saute garlic, ginger, red and yellow peppers, snow peas and bok choy and cook for about 2 minutes, stirring frequently.
5.Add zucchini noodles and chicken back to the pan. Gently stir sauce and pour over noodles, tossing to make sure everything is coated, using tongs or chopsticks. Cook until sauce thickens and zucchini noodles are just tender, about 1-2 minutes**. Serve immediately and garnish with cilantro and sesame seeds if desired.
